Miami By Way Of Havana – Part 2

Texas to Miami Anyone will tell you that the drive through Texas is gruelling. The state just seems to go on and on forever. To add insult to injury, there were multiple accidents along the way. It seemed like the traffic was stop and go from San Antonio all the way to the Louisiana border. No offense to Texans, but they aren’t the greatest drivers. There were no less than 10 major crashes along our route. It was crazy. Once we got to Louisiana, things went a lot faster. In a matter of hours we went through Louisiana, Mississippi, and…

Miami By Way of Havana – Part 1

We’re finally on the road. We packed Havana up and are ready to go. The kitties have packed their favorite toys and we’re off. Heading East We left late on the first day. We only drove a few hours, made it to Willcox, and called it a night. We dry camped at the back of the parking lot at a Harvest Host location called the Cattle Rest Saloon and RV Park. It was a perfect stop over. The cats seemed relaxed so life was good. New Mexico went by in a bit of a blur. Except for a gas stop,…

    Getting Havana Ready to Roll

We’ve named the van Havana, for now anyway. We’ll see if it sticks. It seems appropriate for a trip to Miami, the date of which is fast approaching. It seems like there’s always one more thing to do to get ready.  I feel like we really won’t know what we need until we don’t have it..and so it goes. The Kitties My biggest concern is making sure the kitties have what they need to feel safe.  Maria and I can be more flexible.  We’ll figure it out as we go.  They have food, a litter box, toys, a pole, and…

Settling in to our new Van

It’s been about a year since my last post. It’s taken some time, but Maria has come a long way since her diagnosis of heart failure. She has gone from an ejection fraction of 26% to 50%. She accomplished it through determination, exercise diet, and lifestyle changes. I should say that we accomplished it, as I have made the same changes with her. In addition to Maria’s health journey, my father passed away since I last posted. He almost made it to 90 years old. The last several years were rough for him, as his Alzheimer’s progressed. My point is,…

    Recipe of the Week

Eggs are such a versatile food item. They can be an item added as a binder, as with meatloaf or lasagna. They can also a standalone star of the show, as with this egg roll up. Eggs have gotten a bad wrap (pun intended) over the years. They are good for you. No wait, they are bad for you. I think we are back around to them being good for you. I believe that the latest consensus is that eggs are a nutrient rich, high protein food. They can be incorporated into a healthy diet when eaten in moderation. The…

Eating Low Sodium Is A Challenge

One of the first thing I realized when starting our healthy lifestyle journey was that we were going to have to seriously modify our diet.  We had already been trying to eat a low-fat diet.  We’d even been transitioning to a more plant-based diet.  The thing that we hadn’t been as mindful of was how much sodium we were consuming.  Many of the sodium recipes that I had found were loaded with salt.  Not just added salt, but salt inherent in the ingredients.  Some Facts About Sodium Sodium is a necessary element of human nutrition.  It is necessary for nerve…

    Welcome

I recently retired.  I’d been looking forward to it for quite a while.  We had plans to travel in a camper van that we had gotten a few years ago.  Two weeks before my scheduled retirement date, my wife was diagnosed with heart failure.  I left my job more abruptly than expected and we have been working on getting her healthy ever since.  It’s surprising how long it takes to get in to see doctors these days.  It took six weeks from the time that she was discharged from the hospital to get in to see a cardiologist.  But finally,…
