Eggs have gotten a bad wrap (pun intended) over the years. They are good for you. No wait, they are bad for you. I think we are back around to them being good for you. I believe that the latest consensus is that eggs are a nutrient rich, high protein food. They can be incorporated into a healthy diet when eaten in moderation. The following recipe makes a wonderful brunch. It’s quick and easy. It can be made with whatever veggies you happen to have on hand. Feel free to experiment with different ingredients and spices. You really can’t go wrong here. It’ll add a bit of pizazz to your standard egg wrap.
Egg Roll Up

This makes a lovely brunch. It is not particularly low sodium due to the tortilla, but it is worth the splurge.
Ingredients
- 2 Large Eggs
- 1/2 Cup Sliced Mushrooms
- 1/8 Diced Red Bell Pepper
- 1/2 tsp Sriracha Chili Sauce
- 1/4 tsp Onion Powder
- Black Pepper to taste
- 1 8" Flour Tortilla
Instructions
- Beat 2 eggs and add onion powder, black pepper, and sriracha.
- Saute mushrooms in olive oil
- Add Peppers
- Pour egg mixture into pan
- Place tortilla on top of egg
- Allow egg to set
- Flip so tortilla side is down
- Cook for another minute until tortilla crisps
- Remove from pan and roll so that egg is inside tortilla
